“Arepa-ed My Pants”

As we continue to plug in to life here in Florida, we got invited to a 1st group meal for kids & parents. Emi has 2 really close friends at school and all 6 of us parents get along well – and the 3 sisters enjoy each other. So hanging out is easy and natural.

Our new friends are from Venezuela. One of their favorite, traditional dishes is called an “arepa”. It’s basically an English muffin made from cornmeal that is stuffed with goodies. Traditionally ham & cheese – but it is a flexible & expandable base for a lot of flavor profiles. It was wonderful!

We’ve also been enjoying a mostly normal life. I attended a conference in-person over in Miami. The kids have lots of fun with friends at our house, school, & playgrounds. And we continue to get a few moments here and there to have one-on-one time with each other.

We’re also continuing to make the house our home. Hanging stuff on the walls, organizing, and getting decorations up. The town also continues this trend, with the new high school getting walls recently too.

Ahead of Thanksgiving, our friend group hosted a “Friendsgiving”. Nearly everything was vegan for our benefit – a true sign that our new friends are amazing and thoughtful. We stayed over there until well after midnight!

The biggest news of all is that our sweet Adelaide finally got her first covid vaccination! We’re another step closer to getting back to normal life with a bit less risk. I also got my booster shot to keep my own protection as strong as possible.

We’re hosting Thanksgiving for Karissa’s sister & our nephews and her parents – and are excited to show off our house and town. It’ll be an exhausting weekend, but should be fun!
